Rondo of Blood is my holy grail.
Edit: I beat all the GBA Castlevanias, Symphony of the Night and Simon's Quest, but I can't bring myself to finish the other two NES Castlevanias (the controls are awful) and all the CV's for the Snes are pretty cruddy.
