JS is fine and I have some of his soundtracks, however I must say I like Glenn Stafford/Jason Hayes (Blizzard) music more. Maybe because I used to play Blizzard games a lot and that old-school music stuck within my head.

Best game music for me is the one from Secret of Monkey Island.
Another title where the music improves the gameplay dramatically is Defcon by Introversion, I think in this case we would have a completely different game if the sound was different.

The censor filter here is so extreme, that you have to use the british English curses to get around the censor filter, but to me free spech is VERY important, that is why I think it is screwed having a censor filter here. And the same goes to other places where they have one.

Folks have already mentioned Monkey Island and Grim Fandango, which I definitely wave the flag for.
But for me the ultimate game theme will always be the Leisure Suit Larry theme. It may not be the most beautiful tune ever to come from a computer game, but dammit, it's the one song that I can still hum note-for-note 20 years after I first heard and played it.

The Space Quest series Roger Wilco theme comes in at a close second, but this time for more musical reasons - it's a pretty brilliant pastiche of certain sci-fi theme songs from the 70's. I can hum that one almost note for note to this day

Outcast had the best soundtrack ever, it was performed by a live orchestra, the game was so massive and epic, and the graphics/sound were incredible for a game made in 1999, sad that such a great game went barely noticed.

Yup, I agree with Blood-Pigggy, soundtrack for Outcast was performed by Moscow Symphony Orchestra (French-Russian collaboration). Each tune perfectly fits specific mood it's played at. It did so well for the game, quite unfortunate that the game itself wasn't much of success despite all innovations and very atmospheric alien sci-fi universe.
