Well, actually most grains are used here either in porridge form, or as filler for soups.
As individual serve, you must boil buckwheat in salky water, lot of buckwheat, not much water, boil it for 20-25 mins, cast away remaining water afterwards.
You can eat it as is, with meat, or maybe make milk soup from it (sweet one, usually, but not necessary) - hot milk, sugar, boiled buckwheat.
As filler it's the same: usual soup, and buckwheat added for 20-25 minutes before readiness.
