Just select "Unknown card -- Select from list below" from the list and enable whatever features are supported by your vidcard (probably everything) and 800x600 screen resolution.

This was state of the art when it came out, even used for benchmarking early 3D accelerators IIRC. Great fun to revisit that era, but I'd sure wish Turok had a gamma slider thingy somewhere.
