Could anyone help me find an old game, I originally thought that it might be on the NES, but now I think that it could well be DOS/win .
All that I know about it(remembered) is as follows:

RPG
Standard RPG engine
Play as an arabian trader
Buy and sell comodities
Magic Carpet
Cities and wilderness, with paths between the cities

If you can help me, then thanks in advance.

The only game I know of that approaches what you're looking for is Spice Trade, but it doesn't have much RPG in it.

Do you remember whether there was a specific goal in the game? Was there interaction with NPCs or was it basically just a "trading screen"?

No, but what trading game does? All I get when I think "flying carpet" are Burton's translation of the Thousand Nights and a Night, and Ultima IV. Neither is exactly helpful.
