I don't know how to hand-to-hand fight, I tried to figure it out myself and failed, zombie was kicking my ass...with rifle I know you can hold spacebar and wait for him to aim then fire. Although rifle only has 7 bullets(I think).

If I remember correctly hand to hand combat happens with the same button that aims with the guns (spacebar?) and any direction. So hold Space Bar and press any direction arrow.. Different directions of course produce different punches or kicks.
And about firing the guns, you aim with the spacebar holded down and fire by pressing the up arrow while spacebar is down.

I might be wrong too, it's been a while since I've played any Alone in The Dark.

I think you just hold spcebar until it fires, but I didn't really play the game much =).
